Philosophy

A Controlled Approach to Tea

Jin Cha was built around a single principle: precision serves better than excess.

We work with a focused selection of teas, each chosen for structural integrity rather than novelty. Our approach to flavor is layered and deliberate. Every component earns its place in the drink. Nothing is added for texture, color, or trend alone.

Restraint is how we define quality here. A well-made drink should feel effortless and considered in every detail, not because we simplified it, but because we were disciplined about what stayed.
Craft

Precision Through Teapresso

We extract tea using teapresso: a pressure-based method adapted from espresso principles and applied to tea.

Most tea is brewed by steeping leaves in hot water, relying on time and temperature to draw out flavor. Teapresso introduces controlled pressure to the extraction process, allowing us to regulate how much of each compound is extracted. The result is a denser, more defined concentrate with sharper clarity and significantly less bitterness.

The base becomes cleaner, more consistent, and more expressive than what traditional methods allow. Every cup tastes the same, not by accident, but by design.

Built Beyond the Base

Our drinks are completed with three components developed in-house. Each was designed with a specific purpose and calibrated to extend the tea rather than compete with it.

Our konjac jelly is firm, clean, and made without artificial additives. It contributes texture and structural presence to the drink without adding sweetness or masking the base.

Our cloud foam is dense and finely structured. It integrates with each sip, gradually softening the tea's edge and deepening the overall balance, rather than sitting apart from it.

Our velvet is a smooth, layered element that settles into the drink. It adds body and a quieter richness: not sweet, not heavy, but present in a way that rounds the experience and makes it feel more complete.
